Grown in the town of Quom, La Democracia in Huehuetenango, this high-elevation lot comes from farms sitting between 1,500–1,800 meters above sea level. With steady mountain rainfall and cool nights, the coffee develops slowly, building vibrant acidity and layered sweetness.
This particular lot was cultivated by women farmers of the cooperative, whose dedication and careful harvesting practices shine through in the cup. Grown beneath native Chalum and Inga shade trees, these Bourbon, Caturra, Catuai, and Catimor varieties reflect both biodiversity and thoughtful land stewardship.
Each day’s harvest is cupped by the cooperative’s lab team and separated by quality and flavor profile, ensuring clarity, consistency, and a refined cup.
